The to-go spot is the first part of a larger dining concept coming to the One°15 Brooklyn Marina, where Payard will also serve as culinary director. While the James Beard award-winning Payard has a distinguished reputation in NYC’s pastry world, he has bounced around a lot in the past few years. In January 2018, all three of his eponymous Payard bakeries shuttered a couple years after he resigned abruptly. He then started slinging his baked goods at the European brasserie Karver’s Downtown Brooklyn location, but that also closed last summer.
